Danche, Ethiopia

Organic coffee from the Danche washing station in southern Ethiopia. Sourced from 400 small farms located in the landscape around Worka Chelbesa at over 2000 meters altitude. The vegetation in the area is light forest, and coffee plants growing in the shade of trees have high yields thanks to extraordinarily fertile soil. The washing station is centrally located so no farmers need to transport their harvest more than 40 minutes. After transport to the washing station, fruit flesh is removed and berries are fermented in tanks for three days, then washed in small channels with ceramic tiles. Beans that sink are sorted out as lower quality. After washing, coffee is dried over ten days on raised beds of fine-mesh net, then hand-sorted for up to four hours. Before shipment to the roastery, it is stored for 1-2 months to ensure uniform moisture content.
