Caturrón from Finca Villa Betulia in Acevedo, Huila. A rare mutation of Caturra identified on this farm. Trees are slightly taller than Caturra and bear dark purple berries with unusually sweet fruit flesh. The variety is resistant to coffee leaf rust, provides generous yield, and delivers a brilliant cup profile with notes of blackberry, mandarin, cardamom and toffee. Berries are hand-picked at optimal ripeness and hand-sorted. The fruit undergoes 24 hours of dry aerobic fermentation followed by 50 hours of anaerobic fermentation in GrainPro bags according to Cofinet's Natural EF2 protocol. After fermentation, berries are dried on parabolic benches until moisture content reaches 9.5–11%.
